My husband and I did the outland application and we are passed the stage where I am approved to sponsor. What if I quit my job but don't go on EI will that ruin our application?

It's not a problem. I'm 99.9999% sure that EI is not a problem either. What's a problem is "social assistance of last resort" commonly known as "welfare." That would be a sign that you won't be able to support yourself in the future without government assistance which is why it's a problem.

You should let the visa office processing the application know about the change in status and let them know how you plan to support yourselves, what your plan is to look for another job, etc. In the fine print of the application you submitted you commit to letting CIC know if there's any changes in your situation so it's best to send them that note.

It shouldn't be a problem, as others have said, since you can support yourselves.
