India doesn't allow dual nationality and hence passport would need to be surrendered. If we still have time left on our H1 visa /I 797, can they be used with new Canadian passport to enter US(not sure if Indian Govt will let you keep the expired Indian one) or will you have to file new H1 petition with new passport?

I am aware of TN but this question is about H1 only.

Just take the new Canadian passport and your I797 to port of entry and get a new I94. Better to carry old Indian passport as well with you. Sometimes they ask for that as well.
Yes you can ask that your Indian passport be returned after they cancel it. I think so.....not sure if there is option to choose in the cancellation form or not, but I had my passport returned after cancellation.

With Canadian passport you are qualified for visa free entry to US. So it doesnt matter if you are allowed to keep canceled Indian passport or not.
Possibly cbp might issue a new I94(as i think that they issue it based on passport number and passport country) but other than that you should not have any problem without having Indian passport.

TN, H or L - All are non-immigrant visa hence its same rules for these to seek admission with Canadian passport.
