Hello. When applying for student visa through SDS, what financial documents do I need to show if I'm paying GIC + 1st-year tuition fees myself?
I am also supported by my father who will be there to provide expenses when needed + my program is thesis-based, so will receive funding from there too.

The only comment I would like to make is to understand that the Federal court in Ibekwe v. Canada, ruled in paragraph 30 that:
The UofM estimates that the Applicant requires a total of $34,100.00 CAD per year plus travel expenses back to Nigeria. As noted earlier in these reasons, the Acceptance Letter states that the Applicant was accepted for year one of a four-year program. While the Applicant has enough money to pay for his first year of school, it is not enough to support the Applicant and pay tuition for four years. To satisfy the Officer that he met the statutory requirements, the Applicant would have had to show a total of $136,400 CAD plus travel expenses.
So, this does not mean everyone must show the full duration of study financial support to get the approval but means more discretionary power for visa officers on financial grounds. So, be very careful with preparing your documents, and explanations.
Unless you have proof that you will receive a scholarship or funding on paper from the university, I suggest you show proof that you can pay tuition for the entire program and support yourself (living costs) for the duration of the program.
