Also, is doing a medical straightforward? My wife and son will need to go for medicals. They have to visit a hospital and panel physician, right? Can it all be done in one day? Any insight would be helpful.

Medical or biometrics first will depend on your VO. Some VO's do these late in the process, others very early one. Most of the times they come together with no meaningful time difference.

Yes all can be done in less than one day, and all very straightforward, and the physicians that Canadian deals with are very professional and under rigorous control. They speak in English in countries where English barely exists, and it's smooth sailing. Same goes for biometrics, it's through VFS and it's a 15 minute job.
