I need to get my educational documents attested/verified from WES however I'm not sure if I need all my educational documents verifed or just the latest document. I've done bachelors and a diploma so do I only need the diploma to be attested/verified or both the bachelors documents and the diploma. Any help would be appreciated, thanks!

You need all foreign educaton to be assessed. If you had a Masters then would just say masters but get both assessed.
