I must have a job? I am a student there but on a very comfy scholarship and my husband has a good job abroad as well. Can't I demonstrate I can support her otherwise? And is there any alternative route to me sponsoring her?

No you won’t be able to bring an international nanny with you on a study permit, if your husband is not coming there is always the option for your children and the nanny to remain with him. Do you have a study permit yet.
I have been in Canada for 4 years and I'm becoming a PR soon while still a student. I already got my passport requested. My husband might come with me for a while and if he finds a job stay.. If not he will have to be in between for a while. He doesn't have to be back home for his work all the time. I wouldn't leave my son behind either way for sure.
I Would love to understand whether the income needed to bring a nanny must be Canadian income or can be global? I have a lot of savings as well which I can partially transfer to Canada.

You can try. If you want to try - your husband will need to be filing taxes in Canada on his worldwide income so that his tax return can be used as evidence your family has sufficient income to cover the costs of a nanny.
