I am currently here on a 2 year open work permit which expires in October.

My boyfriend and I are moving in together. If I move in to his apartment this month, we'll have been cohabiting together for 7-8 months by the time my visa runs out.

Could I then stay here as a visitor until we qualify for common law? I read online that I can stay as a visitor for 6 months.

It doesn't look like the 6 month visitor visa is guaranteed, but I'd be applying for an extension whilst my temporary status is still valid and I don't have any complications (such as a criminal record) which would be likely to impact their decision.

Any advice greatly appreciated- thanks!

Yes. Go to the Visitors section of this forum. A similar case was recently discussed. Common law fulfillment is a valid reason for extension but you must prove sufficient funds to support the stay.
