Visa expiry date is until when the visa is valid to be used to Travel into Canada or enter (single-entry)/re-enter (multiple-entry) the country. At expiry, the visa cannot be used anymore.
Duration of stay is accorded to you at the PoE and identifies until when you are allowed to remain/stay in the country from the date of your entry.

An expiry date is the date at 2400 on that day a visa or permit in fact anything quoting an expiry or an enter by date will expire.
So for example if a visitor has a 6 month stay through say 30 September they must leave the country before 2400 hours on the 30th after which they become an overstayer. In the other direction if their visa has an expiry date or enter by date they must arrive before 2400 on that date. .
General advice though is to never leave anything until an expiry date but always have a few buffer days given anything could happen even with the best laid plans.
