I am from Germany and I did my Working holiday 2018 and my Young Professional visa expires in a few months. Each permit is valid for 1 year. I have created a PR profile, but my score is not close to the scores recently announced in the previous draws.

As far as I am aware, IEC work permits are not extendable beyond the normal limits. Only if the passport expires before the maximum time are the reduced period work permits extendable up to the limit.

You've maxed out your IEC participations. An extension is not possible because you'll have used up the full 12 months of your YP work permit.
If you wish to remain in Canada and work longer, you'll need to secure a job offer from an employer in Canada and that employer will need to obtain an approved LMIA. You will then qualify for a closed work permit tied to that specific employer.
Suggest if you want to stay on for a while once your current YP comes up to expiry you look at applying to extend stay as a visitor to stay legal, usually recommeded to apply at around the 30 day window before current permit expires.
