Hello guys - I need some help please!

My Open work permit is set to expire in 1 month (7th January 2021), I am currently in the express entry pool but I have not received my ECA back from WES due to their frustratingly slow processing times, which I am relying on to reach enough points.

I'm worried that I wont be able to apply for my PR before my visa expires, so my question is - Does anyone know a way I can get implied status or any way I can continue to work in Canada until I can apply for PR and get my bridging visa (hopefully this is just a matter of weeks).

If your work permit expires and you haven’t received an ITA, you can’t continue working. Look at changing your status to visitor. Hopefully your WES assessment will come before the next draw.
 
Thanks for your reply @Naturgrl - I hope so too, its my fault for leaving it so last minute.

If I apply for an extension to my visa wont I automatically be put on implied status until a decision is made, even if eventually for whatever reason it gets rejected? Therefore I will be legally be allowed to work in Canada until I have the documents in place to apply for my PR...?

If you apply to extend your work permit, then you will have implied status until a decision is made in your application.

However your extension will eventually be refused and you'll end up in Canada without status.

Just to clarify, the only way a BOWP will be possible is if you apply for the BOWP while your open work permit is still valid. If you apply for the BOWP on implied status, your BOWP will be refused once your work permit extension is refused.
