Hello, my fiancé is awaiting an answer on her visitor extension request and i was told that it must be updated to a PR reuquest once we are married. How does one not apply for PR, but update a visitor extension request to a PR request? Also, does a PR request based on a married partner’s sponsorship require a marriage certificate or simply the documents signed at an official wedding ceremony?

You were told wrong. You cannot update a visitor extension to request PR. The PR application process is a completely different and far more involved application process.
Yes - you need the marriage certificate. If you submit your application without a marriage certificate, there's a good chance it may be returned to you as incomplete.
