I sponsored my wife and her son to Canada. My wife's COPR document states the undertaking length is 3 years, but her son's (he is 7 years old) states it's for 10 years. What does this mean? Am I financially/legally responsible for them for 3 years or 10?

Yes you are financially responsible for them.
3 years for your wife. 10 years for her son.
For her son, you provide financial support for 10 years from the date that person became a permanent resident OR until the child turns 22 years of age, whichever comes first.

As said in the COPR, you are financially responsible for your wife for 3 years and for her son for 10 years. So different lengths of time for each.

You will be responsible for your step son for the 7 remaining years. If they applied and get social assistant, some portion of the child care cost will be on you.
I don't know about the details but there are 7 more years regardless of the relationship with your spouse or the kid.

An example is social assistance. If you apply for social assistance, there is a portion that may be added for having a child. If eligible for social assistance, there may be a provincial child benefit that you are only eligible for if receiving provincial social assistance.
