Your spouse will have to sponsor you for permanent residency (PR) while you are living in the US. Since you have no status in Canada, any sort of temporary status to Canada (e.g. tourist visa, study permit, work permit) will not be approved. The only option is for your wife to sponsor you for PR. Expect the process to take around a year - so the sooner you start, the better.
If an interview is required, it will most likely be held in Jamaica and you will be required to attend in person. Interviews aren't always required - but it may be in your case given your immigration history in the US. Interviews are usually requested when there are concerns your relationship may not be genuine. Unfortunately it's impossible for any of us to predict if an interview will be required or not.
I assume you have been in the US illegally for more than a year. If so, you should be aware that you will be automatically banned from the US for 10 years as soon as you leave the country. So once you leave the US, make sure you have no plans to return for a decade - and make sure you don't try to return during that 10 year period or US authorities may arrest and imprison you.

Just to add, make sure you are honest and upfront about your current status and overstay in the US. Forgetting/neglecting to be honest about that can have some pretty devistating consequences.
