Leaving Canada cancels the extension application. An extension is only good if you remain in Canada.

Depends. Did you apply for a TRV extension as said in your original post - or did you apply for a new TRV?
If you applied for an extension, then it's not possible since extensions are only valid as long as you remain in Canada. So not possible to get any kind of stamp outside of Canada.
If you actually applied for a new TRV, then yes, stamping is possible in India.
If you do leave make sure to withdraw the extension request
