Hi, My H1B visa expired last year and my i797 expires in year 2026. Based on my Canadian visitor visa, can I travel to Canada for a week just on the basis of my expired visa and a valid i797?

Yes, you can. Just carry all your docs like how you attend an interview to be on safer side. They would send you inside to secondary inspection to activate your new i94. this is all routine. not to worry.
