if you have been approved as a sponsor already, then send a scan of the new passport, together with your file number, to Peru.
If you have not been approved as a sponsor yet, then wait until you are approved ( then you will get your file number) and send it to Peru a few weeks later.
As she is from a non-visa-exempt country, she will have to send her actual passport at the end of the process, but only once she is asked for it - so in the meantime, you can inform them with a scanned version.
Good luck,
Sweden

Thanks for this info. Sweden, my husband and I are in the same situation. His passport will expire while we are waiting for his PR processing and I was approved as sponsor near the end of March. So our application contains his current passport info. and by the time they request his passport he will have a new one with a new passport number.
I have also read on this forum that people have submitted both the new and old passports to the VO's as some still staple or attach the visa in the old passport and they tell the person to "land" with both passports. I know in Canada we are allowed to keep our old passports - the gov't office just makes a cut on them so they are recognized as not valid for travel.
Not sure how it is done in other countries and actually when I got my new passport (prior to submitting our PR spousal application) they asked me do you want the old one and I almost said no. Thankfully my hoarding brain that needs to save everything kicked in and I said think I will keep it. Good thing as I needed to photocopy the pages of my prior travel to my husband's country as part of our PR submission.
To DocPeru - I would also suggest your wife keeps her old passport if she can and if for some reasons she cannot, then at least keep a copy of all of the pages. You may even want to enclose a scanned copy of the old passport's bio-data page along with a clear explanation connecting the 2 passports and the UCI number (as Sweden already suggested). Blessings.
