But I personally feel its too risky to move at the brink because we need to take vacation back home or go to home for emergency. So after landing, it is safe to move after 2 years so that there are no issues with residency requirements.

You have to be present in Canada when you apply for PR extensions and you need to provide Canada address to receive renewed card. Else they may put your case in additional review and ask for more residence proofs.In that case, your extension processing could take lot lot longer.
Also I am not sure how you could come back if you don't get your extended PR card before leaving.

Before your medical or passport expiry date, which is earlier. Medical expires one year from test date. They will mention the expiry date in COPR, so you will anyways know from that.
