Taking a gap year while on study permit

Im currently a university student but i want to do gap year next year. I know i can work part time if im on study permit, but am i allowed to work if i dont return to school next year?

No you cannot work unless enrolled in full time education and in fact by not attending school it is likely your study permit will be cancelled.

And you know how difficult it is to apply for work permit? Employer will have to prove (beside paying $1000 application fees) that there is no one else available to do your job.

Much easier said than done.

To qualify to apply for a work permit, you need a full time job offer from an employer and that employer needs to obtain an approved LMIA.

It tends to be extremely difficult to find employers willing to go through the LMIA process.

You should assume working won't be possible at all during your gap year.
