When sending documentation to support an Outland Sponsorship, including marriage certificate, birth certificate of our child, phone bills for the time we were separated, photos, letters of support from family, friends and the community etc etc. would it be advisable to have some letters from some members of my community who have offered to hire my husband once he lands in Canada? Is this a good idea?

All the items you count in the beginning are to prove your relationship but since you are not doing a regular outland but outland from overseas, the job offers and statements will help to prove to immigration that you are planning to settle in Canada when your husband gets his PR so yeah, send them too.

What do mean by not doing a regular Outland Sponsorship but one from overseas? Isn't that what an Outland Sponsorship means? A Canadian Overseas who is Sponsoring a spouse?

Inland and outland has to do with where your spouse lives. Most sponsors already live in Canada. If you moved to Canada now and applied for him from here, you would still be doing an outland application because he is outside Canada. If you moved to Canada and he was able to come with you on a visitor visa, you would have the option to do an inland application where he is staying with you in Canada. The third option which is what your are doing, outland while sponsor is also living outland is only open to citizens who are sponsoring, not if a PR is sponsoring and it adds the burden of proof that you both plan to live in Canada when he gets his PR. If you are living in Canada and applying outland for your spouse, you do not have to prove intent to live in Canada because you already are.
I had no idea about this Inland-Outland definition. That is odd that an Inland sponsorship has no right of appeal but the person might already be here on a visitor's visa? Yet, an Outland has the right of appeal but they might not be allowed to come on a visitor's visa?

Yes, that is the way it is. Some inland applicants have managed to get a visit visa inspite of having a spouse/fiancee in Canada and some are from visa exempt countries. If inland doesn't work, I suppose the spouse can leave and they can apply outland, maybe that is why they don't have appeal rights. Maybe there is a difference in the way they are processed.
