So basically what I wanted to get some help with is my girlfriend is looking to come live with me in Canada. What we were thinking as an option was she was interested in schooling in Canada. If she is able to get a student visa and be allowed to study in canada and was living with me for a year, could we apply for common law and have her stay in canada with me?

If you live together for 12 months and have plenty of evidence that youve done so then yes...
 
Okay that sounds perfect, another thing I wanted to ask was, lets say she got a student permit for the year is there a specific date that she will be allowed to enter? Or can I have her enter canada before her student visa date, so like a couple months before so that way we could apply for common law before the year ended.

Depends where shes from... if shes from a visa exempt country then she should be able to come over no problem. If not then shed have to apply for a visitor visa
 
Shes from the US

Then she shouldnt have any problem coming 2 months early.... ive met many americans studying in canada who come a couple months early to get to know the area
