Thank you for your help!

Anything on your passport that is not in English or French must be translated, irrespective of if that stamp / visa was issued in the 5 year eligibility period or not.

You don't have to translate French stamps because French is one of the official languages of Canada and is acceptable as-is.

So the stamp is in both Arabic and French, does it need to be translated ? Or should I just translate it to be on the safe side ?

Since it is in both Arabic and French, you should translate the Arabic into French. That way you will have two French versions. :)

Well, generally speaking, if a stamp is in English or French AND a foreign language, you would not have to get it translated IMO. I assumed you have stamps in French and different stamps in Arabic from what you had written in your initial post.
