I met my husband online as well but I did not consider meeting our own friends online as per the application. I think the question would mean your family/friends that your spouse met in person. Pictures of you as a couple with other people would be a great proof.
I positive you could put it as a proof of relationship that you have somewhat talked to her parents online, but for the application part, I don't think you could put them as an answer to the question of who you met from her side.
We also had the same situation. Not with parents though. We have met each other families and had spent time with them already, but some friends we had only seen through Skype.
So we made a table as an attached paper, with the columns (Names, relationship to you, date met, place met) and indicated Skype as the place.
I think the idea is for the VO to understand how the couple are sharing their social/family network. Talking on Skype would count in that case.
This sounds fine. BCgirl2012's suggestion sounds like a good idea. Because while I agree talking to someone on Skype is not meeting them, it is definitely proof the visa officer can use to see that your two families and sets of friends are getting to know one another, which is good evidence the relationship is real. So mention it somewhere.
