I have applied for permanent residence under spouse class from India. Yet to receive an AOR. My visitor visa was recently approved. Am I eligible to apply for open work permit once I am in Canada? If so can someone please briefly tell the process?

Unless you are a very few select industries that are high skilled and in demand in Canada the process will take around 6 months if you can find an employer will to try and hire you. You should anticipate not being able to work until you get PR.
The only path to apply for an OWP is for an inland application. The only way you can apply inland is to withdraw your current outland application. And then re-apply from scratch. After COVID, many OWP applications that are included for inland applications are taking a long time to be approved. Some never got the OWP before they receive the COPR.
I do not advice to withdraw and re apply just to take a chance of the OWP approval. (which may take as long or longer than the PR application)
