My fiance and I will be getting married in Canada in November. I am from Japan, and my partner is from Korea.
Could we register our marriage in Canada only to apply for spousal sponsorship? Or does it require us to register our marriage in all of the three countries to prove our marriage in Canada?

How do you plan to apply for spousal sponsorship if neither of you are Canadian?
btw. Canada recongize marriage in most countries. You do not need to re-register your marriage in Canada once you are married. But you will need translation of the marriage certificate if needed for any immigration application (again not sure under what route)

That's sufficient for sponsorship application. I am not sure if your home country will require any other process to recongize your marriage there.
BUT you only need your Canadian marriage certificate (will take a few weeks to obtain) to apply for sponsorship.
I have previously lived with my ex-girlfriend before this relationship. I wasn't sponsoring her for PR or anything, but would that be a determining factor for this spousal sponsorship application?
My previous common-law partner and I ended our relationship in December of 2020, but we decided to live until the rental agreement ends which was in April 2021. What should I consider that the common-law relationship had ended?
I am not sure. But your new relationship seem to develop pretty fast. I don't know which date you can use for ending the common-law relationship (Dec 2020?) when you still live under the same roof. May be other memebers with more experience can help.
