I know there is no minimum income needed to sponsor a spouse. What if they are living with their mother at the moment- who has more then enough money to shelter us both, would they still be eligible to sponsor their partner?

As you rightly said before, there is no minimum income needed to sponsor a spouse. So there shouldn't be a problem in respect to eligibility if that's the only concern.
Ok but I know your supposed to be able to support them? If they are living with the mother who can support both would that be okay?

Thats fine but u should also tell them about how you will support each other in the future. Are you in unversity? Will you try to find a job after graduation? etc
