Hello and thanks in advance for any help.

My wife and I are living in Thailand now and want to move to Canada. I would like to Sponsor her for permanent residence. The only thing that really worries us is the income. Neither of us is working but we have money in Thailand in a joint account, we have money in Canada under my name and my wife has land, a house and a car here in Thailand under her name. Our cash on hand will be in the tens of thousands, so we shouldn't have any financial issues in Canada.

I worked for the last two years in Thailand as a teacher and my wife studied for most of that time. But at this time, we've decided to take a break and would like to do the immigration process now while we're free. Neither of us plans to work until we arrive in Canada.

Is our unemployment a problem in the application?

No this won't be an issue. You will need to explain your resettlement plans to CIC. Highlight the savings and property, and that you would be seeking employment when you return (assuming that's the plan). They just need to see neither of you will be using social assistance...
