It says in the guide that IRCC allows it, just makes sure to keep the original signed copies of signatures.

Origional signed docs have to be submitted with the application. One way is for you to sign the docs, courier them to your Sponsor and have the sponsor submit them directly from Canada.

The guide says the exact opposite; copies are permitted but original signed documents must be available if requested.
Now, the question is: "Can I manually sign the document and the other person scan it?" - in that case, no one document would have manual signatures on it for both people. Unsure if that would be acceptable.
