I have done my 3 year Bachelors in Arts(Economics, Geography, English elective. Honors in Geography). I'm looking to apply in a 2 year AEC Businesses Management course in LaSalle College Montreal, my IELTS score is 7.5 (no less than 7). Should I apply for a diploma or go for a degree?
Better apply in Saskatchewan Polytechnic because your IELTS score is good and please don't go in that college or province. As Quebec is famous for IT related field so better apply Ontario or Sas. Polytechnic so you will get your PR soon and you might be find 2 years PG courses in that colleges. But don't go there in Quebec for business related course.

If you can afford do a Master's, do it. Will help you get a job a lot more and it also increases your CRS points for PR status afterwards. If not, then do something that is likely to help you get a job, think IT, Nursing, PSW, etc.

Going for a diploma after attaining an undergraduate degree will result in a study permit refusal (from a visa officer’s perspective you won’t be making a progressive decision)
So, no matter which province you choose, go for a post graduate level of course !!!
