I am the principal applicant, mostly self employed in the past and currently unemployed. Would it affect our spousal sponsorship application? Do I still need to provide proof of previous work as self employed ?

For a spousal application and you as the principal applicant, it shouldn't affect. You likely won't have to provide 'proof' of your previous work.
You just need to show that you have the savings to support your family. Obviously being employed helps.

Well the sponsor needs to show that, but obviously helps if PA has work experience too. (OP says is applicant)
