The airplane departed on October 18, 2011 1am at Toronto and arrived on Oct 19, 2011 in the afternoon at my country of birth.

Then, The airplane left on November 17, 2011 at my country of birth and arrived on November 17, 2011 at Toronto. (there's a 12 hour time difference that's why its on the same day).

What dates do I have to indicate on my residence calculator to be able to get the number of absences?

You left on October 18 and arrived on November 17 so those are the dates you enter.
