I am needing some help to identify if i need to submit the following supporting documents:

1) Life Insurance (Joint Life Insurance or Life insurance of Sponsor shows 100% Primary applicant as beneficiary)
2) Financial Support (Documentary evidence of financial support between you and your sponsor, and/or shared expenses)
My wife and I recently got married and are yet to open joint bank accounts/ update insurance with beneficiary information. I am trying to figure if these are needed or other proofs like marriage certificate, marriage photos, marriage arrangement proofs

I have some time in India before I leave for Canada and submit the application (2 weeks)
So I should be able to get an insurance here in India. for this insurance policy does it have to be on my wife’s name and she should add me as a nominee

I wouldn't suggest getting a new insurance policy just for the sake of the sponsorship application. If you already have an insurance policy in Canada (privately or through your employer) then I would suggest you add your wife there. This makes more sense and it's what you will have to do either way eventually.
I checked with my employer provided insurance. They wouldn’t let me add my wife to the plan since she is currently not in Canada and doesn’t have her provincial health care set up
Any suggestions? Was the recommendation to add her only as a beneficiary?

That's pretty common to only allow to add a spouse to your extended health benefit when the spouse is covered by provincial health care.
You can sure add her as a beneficiary for any insurnace. And you can add her in your employment profile as spouse (that should be fine since that is required in the tax forms that HR needed to fill in).
