The off campus work permit states you cannot work more than 20 hours a week during an academic session. The government views a work week as Sunday-Saturday. The company I work for sets up the work week as Friday-Thursday. Does this have any impact on the guidelines set by the government? Should I be working 20 hours from Sunday-Saturday or is working 20 hours within Friday-Thursday okay?
Another question, the company I work for sometimes forgets about my limit and has given me up to 30 hours during an academic session. If I worked 10 hours the very next week, does this count as averaging out my hours to 20 per week?

No - you can average your hours. You are prohibited from working more than 20 hours per weeks. If you worked 30 hours during a single week then you have engaged in illegal work which puts your status in Canada in jeopardy. Make sure you don't exceed 20 hours in a single week in the future. It is not up to your company to remember your limit - this is YOUR responsibility.
if u find an on campus job then u may get a letter from them which will allow u to apply for a SIN.u cannot work without SIN. If u dont get the letter then u have to wait for ur work permit to be approved. Just a side note on campus jobs r very difficult to come by for new students.
