I would like to know just a bank letter enough to show proof of fund or need to include 6 months statement with a bank letter

If the bank letter shows 6 months average balance, there is no need to submit 6 months of statements. If not, you'll have to provide the statements.

If the letter from the bank depicts the avg balance over 6 months along with current balance as on date, I do not need to show the statement reflecting transactions?
Also, will I not have to show a gift deed in case money is borrowed? If I need to show the gift deed, then bank transactions will have to be shown right?

Yes to both. You'll have to provide evidence of the gift transaction.
