My girlfriend is a teacher (who will soon be starting summer holidays) and will be driving up to Ontario to spend the summer with me.
Will she need to provide any additional documentation other than her US passport to visit me? Her car will have her clothing and some cooking tools, what will she have to declare?
Will anything change if I fly down and drive up with her?
Any advice and anecdotes are appreciated.

It would be a good idea to give her a letter of invitation, attach a copy of your ID to it.
Also a proof of employment would be a good idea, a standard one that shows she is a teacher and explains why she can spend a few months with you.
