I am planning to apply for Canada PR from India under skilled migrant category. I am confused if I should apply for PR for myself first and then once I am settled in Canada, then apply for PR of wife and kid. Please advise what's the best way in going about the same. Should I apply for my PR only or for the full family?

Not necessarily. But it is easier to get PR for the entire family all at once. And even if the family doesn't accompany you, you still must supply all the necessary information and documents about everyone in the family. So unless there is a good reason to leave your family behind, apply for all at once.
Will it be difficult to apply for them once I am in Canada? The only reason I am thinking about this is that I don't want to risk that much money for all 3 of us, if I don't get PR. I can bear the loss incurred to my application only.

It's going to be more difficult and more costly to bring them later. I suggest you thoroughly familiarize yourself with the process and not rely on the forum, so you can make an informed decision.
