I am an PR and I would like to prepare for the parent sponsorship, when checking the requirement, I found that it asked you to provide income for past 3 years, in this case I only started working in late 2019, and my 2019 income only included 2 month of work income and that does not meet the requirement, in this case can I still apply and give an explanation to the immigration office, or do I have to wait until next year to be considered.

Wait till you meet income requirement. BTW we do not know for sure how the 2022 PGP will be. But if it's the same, then you need to wait for another year.
Note that you need to include all your dependents and all your parents dependents to calculate family size.
