I am just compiling my photos and documents to accompany my Sponsored Spouse/Partner Questionnaire (IMM 5490) form.

Can I use photocopies, or do I have to use original photos and documents?

As for photos you can either use the original loose ones or do what a lot of members have done is compile them on to an MS Word document and print them out. Documents depending which ones you are talking about. If the documents are official type such as your marriage certificate you may need to get it photo copied and the copy authenticated/legalized/ Notarized.. Check your "Country Specific Instructions" this form will tell you what is expected of you concerning documentation.

for us applicants ONLY a copy is necessary. marrriage and birth certificates do not need to be notarized.

as long as the pictures are clear and the officer can see they represent a real relationship, then it doesn't matter if they are copied, printed, or loose.

What about non-legal documents, like postcards and letter from my spouse to prove our relationship? These aren't post dated or anything, but do have the date written on them. I'm thinking of including photocopies of these as evidence of our first year of relationship. Would this be acceptable do you think?
 
Yes, they are fine. Anything pretty well is acceptable, the question is how much weight the visa officer will give it. Adding postcards and letters is fine, as long as you have other things too. A variety of evidence is best.
Send photocopies, though, because you probably won't get things back. If they require originals of anything, it will say in the specific country instructions.
