Query about migrating under skilled worker category

I have plans to migrate to canada under the skilled worker category.
I have 3 years experience as a Food service manager in the UK, so I will be applying under that option from UK.

Appreciate if you could answer my queries below:

1)How long will the initial migration visa be stamped for ?
2)Is it necessary I should work as a food service manager itself in canada or I
can look for a different job profile ?
