I have had a look around but cannot find anything conclusive.

My wife will be returning to Canada to start working (self employed) in preparation for me applying for a spousal visa.

We will spend the year it take for the application to go through replenishing out savings, as these were blown through redundancy and Covid19 (what a year!)

I have seen that there is no lower income limit for financial support, but she will need to prove she can afford to support us both.

My question is, how do we quantify this? if there is no lower income limit, what criteria would she need to fulfil and with what evidence?

The Document Checklist - your application bible - will ask for proof of employment - since she is self employed it will not be a letter from her employer, but the checklist has some suggested documentation - and her last Notice of Assessment.
 
Thanks for your reply, as she will be self employed I assume this would be, as your suggest her notice of assessment.

As she will likely be moving around April time and building up, she may not have anything to submit in the way of tax assessments in time.

If we were to rely on our savings, for instance, how would they look at this without a minimum figure?
 
You can submit proof of your current savings, your Wife’s plan to be self-employed in ..... industry when she returns. I assume it may be likely that she has worked in the industry in the past which you can explain. You can explain that due to covid your savings have decreased and you will be working on increasing them throughout the sponsorship period. I would suggest that you send in an update via webform later on in the application at the 6-9 month mark depending on how fast processing is going and send a copy of your current savings if you have been able to save more. A huge amount is not needed and if there has been an increase in your savings over time that should be enough. You can also include savings information if you were able to save more as well.
