So for the proof of funds, bank statements of how many months are required? Though the website doesn't mention any specific time period, I am told it's usually 6 months. Is that correct?
You are supposed to provide bank letter that states account opening date , average balance for six months and state your debt balance.
Bank statement aren't permitted unless your bank can't provide you this letter

Also, me and my wife have a joint bank account, but my wife is the primary account holder. Would that affect my application, should I open a new bank account with me as primary applicant and transfer funds into it?
I am applying for PR and shall be accompanied by my wife and a kid.
You don't need to have all the funds in a bank account for 6 months. If you gradually save the money until you meet the minimum required funds that'd be acceptable.
You also don't need to move the funds from your wife's account. If anything she can provide a no objection certificate giving you access to the funds for immigration purposes.
