I will be applying for Student Visa to attend a university in Quebec for PhD.

I know that I need the tuition fees of the first year + the proof of funds needed for Quebec alongside return ticket price and insurance.

However, I will be also getting a grant and work part time as a Research Assistant in the university and get paid. The university will provide me an official supporting document for that. The amount I'll be receiving is higher than both tuition fees as well as the PoF needed which basically renders the cost of tuition paid alongside money remaining.

Is this taken into consideration by the VO, or regardless of this, I need to still show tuition fees of the first year + the proof of funds + Various costs with my application?

It is highly recommended to provide additional proof of funds to support your studies regardless of the Research Assistant /Grant . What it means is that, you can financially support yourself without working in Canada. VOs usually consider this especially if the funding is not coming from your home country .
Hope I have answered your question.

Good luck in your application.

Cheers!
