I just received my post-graduation work permit letter today with the validity date and the document number from inside Canada. Do I have to wait to renew my SIN until I receive the physical work permit in the mail or may I go to a Service Canada and get my SIN renewed now since I have the official approval letter with the document number? Thank you for any advice.

No, they will want to see the PGWP.
