My spouse is unable to crack the IELTS with higher bands and this in return is affecting my CRS score.
I am thinking to apply as a single applicant saying spouse is not accompanied. If I get PR then I can sponsor her later. Can anyone suggest if this is appropriate?
If I am applying with above situation as single applicant, do I have to show POF for single person or for 2 persons?

You must show POF for 2 people. You will not be applying as a single applicant. You will be applying as a married applicant but with your spouse listed as non-accompanying.
Yes - you can list your spouse as non-accompanying and sponsor them later. Be aware this may mean you'll be separated for most of a year.
