I wanted to know if I need to provide Letter of Reference from the Employer's which are NOT UNDER NOC CATEGORY AS, I AM UNABLE TO CONTACT THEM....I WAS ABLE TO OBTAIN A LETTER OF REFERENCE FROM NOC ONLY...WHAT DOCUMENTS I NEED TO PROVIDE APART FROM THAT FOR NON_NOC CATEGORY..
PLEASE HELP...ALSO, AS MY SALARY WAS TOO LOW, I WAS PAID IN CASH...AND DO NOT HAVE ANY INCOME TAX FOR INDIA>>>!!!!!
I am sure you should provide a proof of your employment for both NOC & non-NOC. Do not be concerned of your salary that you got paid. Document requirements vary depending on the country specific visa office. Therefore, you need contact Canadian High commission in India.
I had the same issue of getting a reference letter from one of my past employers. So I had to travel 750 Km just to get a reference letter. It is our responsibility to provide all supporting ducuments. If you can not contact your previous employer, see if you could find your manager or your supervisor who you worked with. Perhaps they could help you some way. May be your past clients who you dealt with in the same company could help you.
It is always better to have all supporting documents with your application as this will help the visa officer and also speeds up the application process.

Below is a list of the most commonly used documents to prove past work experience. Usually, you will NOT need to obtain all of those documents for each work position. Instead, a combination of those documents for each position is usually sufficient.

Offer-of-Employment
Contract signed between Employer / Employee
Foreign Temporary Work-Visa Applications (such as H1 in USA)
Pay Slip Copies (Just a few: first/middle/last)
NOTES:
Applicants with long work histories usually do NOT need to obtain documents proving their entire history.
Usually, you will need to prove the last 5 years of your work history.
If the Applicant has some very good documents from the employer describing the position already, then getting Reference Letters, might NOT be necessary.
Please keep in mind that providing documents to prove your work experience should be one of your priorities in the immigration process.
GET LETTER FROM WHO?
Reference letters proving past work experience, can be obtained from:
Supervisors (this is the best source)
Colleagues (people you worked with)
Clients
If the source of your reference letter will be a colleague or client (instead of a supervisor), then it is better to have a reference letter from a couple of clients and/or colleagues.
