I'm about to complete my one year so I could apply in CEC.
Q.1 Do we usually consider 365 days 12 months or count more 6 - 10 days extra for Stat holidays.
Stat holiday should count (because it pays). But usually you would want 1-2 weeks extra for safety.

I'm about to complete a year experience however 12 months is the combination of Two jobs
Job A has 8 months experience in category 0
Job B (current) 4 months experience with LMIA category B
Which category Expereince do I go with while filing for EE

12 months including stat holiday +2 - 3 weeks to be on safe side. Maximum paid vacation they will take in consideration will be 2 weeks.

You just need to input start/end date and NOC of each job you've worked. (And you indicate your current one is current)
Since CEC accepts combination of experiences to make 1 year, you'd be fine with combo of two jobs in NOC 0 and B. CRS-EE requires continuous in one NOC so you don't get 1 year Canadian experiences points, but you have LMIA so nothing else matter.
