Hello,
I am a PhD student in Quebec and I will graduate by the end of the year. I DEFINITELY intend to leave Quebec after my studies, so I am applying for Express Entry. In case I receive an invitation before my graduation, would I have to move immediately? or is there a way to stay in Quebec and graduate and then move out of the province? and if so, is there a way to prove to the immigration officer that I wholeheartedly intend to leave Quebec? I am assuming they will not accept my enthusiasm and fervor as acceptable proof. I would greatly appreciate your response to this

You would want very strong evidence. Something along the lines of a job offer you have already accepted outside of Quebec that will start immediately post-graduation.
You can just write in your Letter of Explanation (LOE) that goes along with your application that you intend to move out of the province once you graduate. In addition to that you can always send your updated proof residence information (via CSE) after you've submitted your application. So, really, it should be no problem at all.
Living in Quebec is almost no different than living out of Canada and then Landing in a Province outside of Quebec once you get your COPR Interview request in your email. It's were you intend to stay that counts, not where you are whilst applying.
