I don't have a full time job at the moment and my visa will expire in November as well.
If I apply for a PNP and get a full time two year offer from a company in the next month will I be able to extend by work permit through bridging given I have a PGWP before it expires? OR Do I have to leave the company? OR Do I apply for LIMA?
Which province are you located in? You could try to get a job in an atlantic province with a designated employer. That way, you can get sponsorship for work permit and PR. There are threads with the lists of designated employers on here.

Why don't you apply for amendment for three year permits? Bowp is only applied when you have pnp nomination letter plus file number from federal pr application.
