I just got an email from CIC requesting for me to send my passport to the Canadian embassy in France.
I am currently in Canada as a tourist, and will not be back in France for some time. Moreover, I will be travelling for work soon and will need to submit my passport to get a visa. As such, I was wondering if it would be possible to send my passport in Canada, to speed up the process.

Yes u can send in Canada, the processing time is around 30 days. Not sure if you need to send only a copy of passport or the physical passport as well.
Inside Canada, you can call 1-888-242-2100 and follow the prompt to "Information about Express Entry" (option 7) and then pressing 0 to talk to an agent or call 1-613-944-4000 and follow the prompts like 1 1 1 7 0 to talk to an agent.
Alternatively, you can raise a CSE and ask to change your Visa Office from Paris to Ottawa.
Follow what Maverick wrote to change your visa office.
Also, being from a visa exempt country, you wont need to submit your passport, just a copy of it instead.
