Would not recommend mentioning this or including any form of proof from a doctor. You will have the same chance of better of approval by saying that they just want to come to visit their son and his family in Canada for no specific reason. Mentioning coming to Canada because of the birth of a child can lead to concerns about illegal work before or after the child is born from cleaning to providing childcare or concern about length of stay or not wanting to leave Canada.
