The exact date on the CoPR doesn't really matter. I'd suggest listening to the officer, and not worrying about it.
You have Permanent Resident status, and that status does not depend on the date on the piece of paper.

Legally, no. Just remember what the real date was, make a note, and keep it in your records.
They will have the correct date in the computer.
